Pico De Gallo

5 whole plum (roma) tomatoes
1/2 whole large onion
3 jalapeno peppers
Cilantro
Lime juice
salt to taste

Chop jalapenos, tomatoes and onions into a very small dice. (Leave seeds in your jalapenos for a hotter pico). Adjust amount of jalapenos to your preferred temperature. Next, chop up a nice-sized bunch of cilantro. Just remove and discard the long leafless stems before chopping. No need to remove the leaves from the stems completely. Place all of these ingredients together in a bowl and give it a good stir.

Squeeze the juice of half of one lime into the bowl. Add salt to taste and stir again.

Buffalo Chicken Dip.

-Boil 1 chicken breast until cooked, let it cool and then shred it.
- Soften 1 pkg of Cream Cheese and spread in a casserole dish (I use an 8x8 glass pan)
- Add 1 Cup of Buffalo Sauce (I usually use Franks Red Hot) to baking dish - use more or less depending on your preference
- Add 1 Cup of Ranch Dressing
- Mix in shredded chicken
- Add in 1/2 C blue cheese crumbles (more or less depending on preference)
- Mix well
- Sprinkle shredded cheddar cheese on top
Bake at 375 for 20-25 mins until cheese is bubbly

mozzarella appetizers

Slice fresh mozzarella (unsalted from local meat market store)
Slice tomatoes into thin slices and place on top of mozzarella
place one leaf of fresh basil on top.
salt/pepper
drizzle with olive oil or mild balsamic vinaigrette....

Dates with Goat Cheese wrapped in Prociutto

  • 1/3 cup soft herbed goat cheese
  • 16 Medjool dates, pitted
  • 16 large basil leaves
  • 4 wide, thin slices prosciutto di Parma, each cut into 4 long strips
  • 16 toothpicks, soaked in water 10 minutes

  • Spoon 1 teaspoon cheese into each date; wrap with a basil leaf, then a prosciutto strip. Secure with a toothpick. Broil until cheese bubbles, about 3 minutes. Serve warm.

    Guacamole

    3 whole Avacados
    Pico De Gallo
    Lime Juice
    Salt To Taste

    Start with buttery-soft avocados. Halve them lengthwise and remove the pits. Next, with a spoon scrape the “meat” out onto a large plate. Next, with the bottom of a clean cup (or with a fork) mash the avocados, making sure to leave it relatively chunky. Add just a couple of shakes of salt to taste. Next, add a generous helping of Pico de Gallo. Fold together. Lastly squeeze the juice of half of a lime over the top. Give it one last stir.

    Brown Sugar Kielbasa

    - Slice turkey kielbasa in 1/2" pieces, toss in baking dish
    - Cube 1/2 stick butter, place butter slices over kielbasa
    - Sprinkle with 1 C of brown sugar
    - Bake at 375 for approx 25 minutes, stirring every 5-10 minutes

    Bruscetta

    Thinly slice a loaf of artisan bread.  Place the pieces on a baking sheet and drizzle them with olive oil.  Bake for about ten minutes at 350, until they are crisp.
    In a food processor, combine tomatoes, onion, olives, green pepper, and any other veggies of your choice.  I like to throw in a little green and yellow squash as well.  Spoon the veggies onto the toast pieces, and serve right away.

    Hot Pizza Dip

    -1 (8 ounce) package cream cheese, softened
    -1/2 teaspoon dried oregano

    -1/2 teaspoon dried parsley

    -1/4 teaspoon dried basil

    -1 cup shredded mozzarella cheese

    -1 cup grated Parmesan cheese

    -1 cup pizza sauce

    -2 tablespoons chopped green bell pepper

    -2 ounces pepperoni and/or sausage, chopped

    -2 tablespoons sliced black olives

    1. -In a small bowl, mix together the cream cheese, oregano, parsley, and basil.
    2. -Spread mixture in the bottom of a 9 inch pie plate, or a shallow microwave-safe dish. Sprinkle 1/2 cup of the mozzarella cheese and 1/2 cup of the Parmesan cheese on top of the cream cheese mixture. Spread the pizza sauce over all. Sprinkle with remaining cheese, then top with green pepper, pepperoni and olive slices. Cover, and microwave for 5 minutes. Serve hot.
