Turkey Burgers

1 lb. ground turkey
1/4 cup chopped banana peppers
1/2 cup crumbled feta cheese
salt & peper to taste

In a bowl, mix the ground turkey, peppers and feta. Season with salt & pepper. Form 4 patties. Cook on grill or stove for 8 mins on each side (or until 180 degrees F). Serve on hamburger buns.



Ingredients:
1 pound raw lean ground turkey
1 cup finely chopped fresh mushrooms
1/2 cup plain bread crumbs
1 finely chopped small red onion
2 eggs
3 tbsp. finely chopped flat leaf parsley
3 tbsp. Dijonnaise
3 tbsp. ketchup
2 tsp. crushed garlic
salt and pepper to taste
 

In a bowl, combine all the ingredients and mash together by hand until integrated.   Add more equal amounts of Dijonnaise and ketchup if you’d like the mixture more moist. Form into  3/4 of an inch thick patties.

Cook on a med heat charcoal grill  or grill pan on the stove.  Cook for about 7 minutes on both sides, or until patty is fully cooked.
 Serve on a bun with your favorite toppings.  You can even add cheese if you like.   These burgers are so good, you won’t want the cheese.

Will make 4-6 serving depending on patty size

BBQ Sandwich

2 lbs ground turkey
2 large onions
1 tsp vegetable oil
2 Tbs flour
2 Tbs sugar
1 tsp salt
¼ tsp pepper
1 Cup of ketchup
1 Cup of BBQ sauce
2 tsp Worcestershire sauce 
  1. Brown the meat and onions in a large skillet with the oil. Pour off the fat.
  2. Combine flour, sugar, salt and pepper and sprinkle over the meat and stir. Add the ketchup, BBQ sauce and Worcestershire sauce and stir.
  3. Cover and simmer for 20 minutes.

Turkey meatloaf

  • 2 pounds ground turkey
  • 1 cup milk
  • 1 cup Italian seasoned bread crumbs
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 pound Colby cheese, cut into 1/2-inch cubes
  • 1/2 cup ketchup (optional)
Directions1.     Preheat oven to 400 degrees F (200 degrees C). 2.     In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup. 3.     Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

Note:  We added 2 cloves garlic finely diced, ½ of small onion chopped and tablespoon of Worchestire Sauce.  We also did cheddar/ Jack cheese instead of Colby and also made one with a few chunks of Pepper Jack and the Cheddar/ Jack to add a little kick.



OR

  • 1 1/4 pounds ground turkey
  • 1 cup coarsely grated zucchini
  • 3/4 cup finely chopped onion
  • 1/2 cup dry seasoned breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

  • 1/4 cup peach preserves
  • 4 teaspoons Dijon mustard



Preheat oven to 350°F. Combine first 9 ingredients in large bowl and mix well. Shape mixture on rimmed baking sheet into 8 x 4 x 2-inch loaf. Bake meat loaf 45 minutes. Remove from oven. Stir preserves and mustard in small bowl to blend. Spread glaze over top of meat loaf. Return to oven; bake until thermometer inserted into center registers 165°F, about 20 minutes longer.

Transfer meat loaf to platter. Cut crosswise into slices and serve.

Taco Salad

  • 1 lb ground turkey
  • 1/2 medium onion, finely chopped
  • 1 cup salsa
  • 1 (15.25 ounce) can kidney beans
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
Just brown the meat with the onion, add the rest of the ingredients. We use taco salad bowls, put lettuce in the bottom, then the meat mixture (that makes it sound gross..), and top with cheese and sour cream and whatever else you want. It's yummy!
