Crockpot Meals

Busy Day Chicken

You just put a whole chicken in the pot and pour you favorite bbq sauce on it (mine is honey bbq or brown sugar).  I like to put a little inside of the bird too.  Add a bit of water and leave it for 8-10 hrs!  I will literally fall off the bone so be careful when removing it from the pot. I usually drain the juice and then put the bird on a baking sheet to cut up.

Crockpot Hot Fudge Cake

(4 points on WW)
3 c. skim milk (I USED 2 ACCORDING TO BOX)
1 box SF cook & serve chocolate pudding
1 box Super Moist chocolate fudge cake mix
1 1/3 c. water
1/2 c. applesauce
6 egg whites (I USED 5, 6 seemed like too watery a mix)

Spray a crockpot container with nonfat cooking spray. Whisk skim milk with dry pudding mix in crockpot until dissolved. In a medium bowl, mix dry cake mix, water, applesauce, and egg whites with whisk for two minutes until blended. Very gently pour cake mixture over pudding mixture. DO NOT MIX. Cover and cook on high for 2 1/2 hours. Serve hot.

Crockpot Lasagna

10 oz. lean ground beef
1 cup sliced fresh mushrooms (optional)
3/4 cup minced onions
3 cloves minced garlic
14 oz. can chopped tomatoes & green chiles w/ juice
5 oz. tomato soup
salt and pepper
1/2 tsp. dried oregano
8 oz. FF Ricotta cheese
1/4 cup grated FF Paremsan cheese
1/4 cup grated FF Mozzarella cheese
6 oz. Whole Wheat Lasagna noodles, uncooked
6 oz. additional FF shredded Mozzarella cheese

Instructions:
Saute meat, onions, mushrooms, garlic and spices until meat is browned...In a bowl, mix tomatoes and juice and tomato soup together...Add about 4 oz. of tomato mixture to bottom of crock pot...Add a layer of broken lasagna noodles...Add another layer of 1/3 of the meat mixture and cheeses...Continue to layer ending with a layer of sauce...Sprinkle shredded cheese on top...Put on lid and cook on low for 4 - 6 hours and heated through

Notes: I used a pound of beef
I added whole carton of mushrooms
I used store brand tomatoes with chiles
If you don't like or can't find FF Parmesan cheese, use RF or Regular and just account for the WPA's

Southwest Chicken


3 b/s chicken breasts
1 can diced tomatoes (undrained)
1 can corn (drained)
1 can black beans (drained)
1 "try me" taco dip mix from http://www.devildips.com (or you can use an envelope of fajita mix.)
1 brick of cream cheese

Place chicken in crock pot.  Add all ingredients except cream cheese.  Cover & cook on high for 3.5 hours.  Remove chicken, shred with a fork, and return it to crock pot. Add cream cheese & cook an additional 20 minutes or until cheese is melted.  Stir well. 

This can be eaten by itself or mixed with bowtie pasta for a meal that will feed a TON of people.  It tastes MUCH better with the taco dip mix from the website posted IMO... a LOT more flavor.  :-)

Broccoli & Cheese Chicken

4 b/s chicken breasts
pinch of salt
1 can broccoli cheddar soup
1/4c milk
2 tbsp melted butter
1 bag frozen broccoli (or fresh if you prefer)

Spray the crock pot and put the chicken in the bottom.  Sprinkle with a pinch of salt (if desired.)  In a bowl, mix soup, milk, and melted butter.  Pour over chicken and cook on high for 3 hours.  Add broccoli, but do not stir.  Cover and cook another 20-30 minutes, depending on how crisp you like your broccoli.  Serve over rice. 

Note: I have also used cheddar cheese soup in this, and made a different veggie on the side.  The leftover broccoli/cheese mixture is also really good on top of a baked potato for a quick lunch.
