Katie's WW b~day cake recipe

So in order to make low cal/reduced fat cupcakes, take a box of cake mix (even better if you can do a low sugar or low fat/cal mix) and instead of mixing it with eggs, oil, and water, you ONLY use a regular 12 oz. can of diet soda (dark soda for choc. cake, clear soda for white/yellow cake).Directions literally go like this:Dump cake mix into bowl, pour in can of diet soda, stir until combined and smooth, bake as directed on the box.  Since the diet soda has no calories or anything, you only count the nutritional info from the cake mix alone.  Normally these are good enough to eat alone, but this weekend I put fat-free cool whip on since it was my bday.

Neiman-Marcus Cookies


2 cups butter
  • 4 cups flour
  • 2 tsp. soda
  • 2 cups sugar
  • 5 cups oatmeal (blended)
  • 24 oz. chocolate chips
  • 2 cups brown sugar
  • 1 tsp. salt
  • 1 8 oz. Hershey bar (grated)
  • 4 eggs
  • 2 tsp baking powder
  • 3 cups chopped nuts (your choice)
  • 2 tsp. vanilla
Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.
(Recipe may be halved)

Tiger Butter

1 bag white choc chips
1 bag dark choc chips (I like to use the 60% coco)
3/4 cups peanut butter

Melt white choc and peanut butter together and pour in cookie sheet (put wax paper down to help get it off later.  Melt drk choc and pour over white choc/ pb mixture.  Using a fork or knife gently swirl the mix together until it looks marble.  Place in freezer for at least 20 min then break apart like a bark and enjoy =)  It is best if you store it in the fridge.

Fruit Pizza-


1 tube of premade sugar cookie dough and roll out the size of pizza pan
1 box of fat free cream cheese
1/2 cup of sugar whipped into the cream cheese

Bake the pizza crust for about 12 minutes (depending on sugar cookie directions)
Whip sugar into cream cheese until fluffy then refrigerate
Cut all fruits (I use strawberries, blueberries, mandrain oranges, bannans and kiwi)

Let crust cool and then spread cream cheese mixture on, put fruit all around  and then put back in fridge for about 30-45mins and then serve!

Strawberry Cream Squares

2 c. coarsely crushed pretzels
3 tbsp. sugar
1/2 c. butter, melted
1 (8 oz.) pkg. cream cheese, softened
1/2 c. Miracle Whip salad dressing
2 tbsp. orange juice
4 c. Cool Whip non-dairy whipped topping
2 (3 oz.) pkgs. strawberry flavor gelatin dessert
2 c. boiling water
2 (10 oz.) pkgs. frozen quick thaw strawberries, in syrup, not thawed




Stir together pretzels, sugar and butter. Press into bottom of a 9 x 13 inch baking dish. Bake at 350 degrees for 10 minutes. Cool. Beat together cream cheese, salad dressing and orange juice. Fold in whipped topping. Spread over the crust.

Dissolve gelatin in water. Stir in frozen berries until they separate. Spoon over salad dressing layer. Chill until set.

Oreo Cookie Dessert

1 pkg. Oreo cookies
1 (8 oz.) cream cheese
1 lg. container Cool Whip
1 pkg. instant chocolate pudding
1 pkg. instant vanilla pudding
1/2 c. sugar
4 c. milkCrush Oreos in food processor (2 rows). Press into pan. Combine softened cream cheese with sugar and fold in 1/2 cup Cool Whip. Spread on crumb layer. Prepare chocolate pudding and spread. Prepare vanilla pudding and place over chocolate. Top with Cool Whip and remaining Oreo cookies crumbs.
