Misty's Fajitas

*Chicken or steak ( I prefer chicken)
--cut it into stripes about a quarter inch thick
* Cut up veggies (I use onions, green peppers, red peppers, yellow or orange peppers, and a little jalapeno pepper)
*Warm pan up on stove til it's hot add some extra virgin olive oil about a tbsp
*Turn down the heat to a medium and sauté your veggies
*Put them onto a plate on the side
*Next add your meat to the pan (season with mrs dash extra spicy or whatever season you like)
*Once your meat is cooked add your veggies back to the pan and let them cook together for about 5 minutes on medium heat
*Serve and Enjoy! My favorite part is the Strawberry Margarita I make to go with it... fajita rita nights :-)

we make them with turkey and green and red peppers and onions, cheese and salsa topping

Joanne's Tofu Tacos

Substitute tofu preferably the firm kind in place of any meat

Sara's FI's famous enchilada's

-Start by finely chopping an onion and a green pepper
-In a skillet, cook 1 pound of ground beef, or turkey
-Add the onion and pepper to the meat
-Mix in half a can of enchilada sauce
-Spoon the meat onto enchilada wraps
-Roll them and place them in a baking dish
-Pour the remaining sauce over the tops of the enchiladas, and then sprinkle with cheese
-Bake in the oven for about 15-20 minutes at 350

I usually serve them with refried beans and a salad.
